Full-time Research Professor assigned to the Food Engineering Education Program of the Multidisciplinary Academic Unit of the Huasteca Zone. I work in the extraction of biomolecules of by-products from the processing of raw materials of vegetable origin. These raw materials are produced in the Huasteca Zone of the State of San Luis Potosí. The characterization is at the molecular level as functional. The main functions to be tested are those related to the formation of colloids useful in the development of new food products.
